I did love him but... After those allegations, I don't think anyone will
show his reruns. I was very fond of his assistant, even though I can't
remember his name. Now I am confused. Tried to look it up and someone said
Cliff Smith. Another person said it wasn't Smith. Still another said Craig
and Craig sounds familiar. But still another says Craig is now a counselor
for abused kids.

I know there were allegations but was anything ever proven? And I hope that
Craig (if that was his name) was not abused. I am just even more confused
now!

I also loved the Two Hot Tamales and that one older guy who was a Cajun
chef. He was funny!

His cookbook is one of the few that I have used for more than one recipe. I
still have it.

Oh the Galloping Gourmet is one of the few cooking shows my mom ever
watched! Loved it! His more recent show was good too but I liked the first
one better.

Are you talking about the one when Julia Child introduced him to the
world?

That came later. On the nascent Food TV he had a boring show with no set,
just a fridge behind him. He hardly ever looked up at the camera and spoke
in a monotone voice. It was a couple years later he was the over the top
flamboyant chef Julia took to the cleaners.

I agree! I much prefer a real cook discussing food and sharing good
recipes.

What came later? Cable hadn't been invented when the show I'm

Someone must be watching that crap because it's everywhere. I don't
even know who those dancing "stars" are. Duck Dynasty... apparently
all you have to do to get a TV show these days is act like a redneck.

Top Chef and TC Masters are all on Bravo, not the FN or Cooking Channel.

They aren't just timed events and competitions. Most of them have
adopted some of the worst aspects of "reality" shows, but sticking in a
bunch of drama queens. There is usually someone whose mother or sister
has just died and they fake a few teats while saying they are going to
win it to make their recently deceased proud of them.

I used to like the dinner party shows until the contestants got too
weird, snooping through peoples closets and learning that they are cross
dressers and crap like that. In one show there was a contestant who had
never cooked before. Rather than bombing and being taken off the air,
there were clones of the show.

My 2 favorite shows are the PBS ones "Cook's County" and the other
one....both with that same guy with the bowtie. Those are good. On
Saturdays at 10-11am here.

Older good ones that I don't see any more we
- Emeril
- Great Chefs
- Wan Can Cook

YAN Can Cook. He's quite the entertainer and was my DD's favorite TV
cook when she was little. She started noticing him when she was 2 or
3 and he became appointment television for her every weekend.

Thanks for the correction. It's been YEARS since I've seen that show.
I did see him about a year ago as a judge on "Iron Chef" and as
always, he was funny.

I bought a wok and got very into it in the mid-80's as a result of Yan.

I mentioned them as significant references to cooking-as-competition. I
think they were the earliest and most successful, and inspired the
conversion of many other shows: "So you think you can cook" and "so you
want to be a FN star" and "world's worst cook" and some of that other
claptrap.

I liked another competitive show "The Restaurant" (I gather from a wiki
article) from Britain that featured a French cook, Raymond Blanc as the
MC/judge. I thought it was named something else when it appeared in
the US.

Anyway, in this competition a couple are given an opportunity to open
their own restaurant and are slowly "voted off the island" by their
performance. The winner gets to open a restaurant with Blanc. It was
damned interesting, though much of the interest had to do with the
machinations involved with running a restaurant: Purchasing, effective
use of resources, menu planning, efficiency of service, and making a
profit. Very little could be said to be about cooking, per se.

It was damned entertaining, but after a while the competition were so
hapless and incompetent, as with several seasons of Hell's Kitchen,
that the show didn't really offer anything of value regarding either
cooking or rooting for a particular participant.

I play guitar and other musical instruments and when I'm not actually
playing, I like reading books about music, pursuing repertoire, reading
guitar methods, learning unrelated instruments, and other "non-playing"
type stuff. I think it helps keep my mind in that world even when I'm
not doing it per se. Similarly I like shows that *relate to cooking*
even though they are not recipe production shows.

That said, many of these shows are pitiful by any measure of entertainment.

That was the show that really got me and my new bride excited about
cooking, about eating and and about pursuing interesting food. For us,
a watershed moment.

We were cooking from one of his books this weekend.

We like the THT too. As a result we went to one of Feniger's
restaurants, Border Grill. She shmoozed at the tables and my wife asked
her where she could buy a good carbon steel knife. She told us about
an obscure place, a tiny hardware store actually, in Japan town where
we could buy one for a reasonable price (mid-90's). We still use it.

He's not that old. I believe I first saw him around maybe 1996 or so. And
it was the very early days of Food TV when they had no budget to speak of.
Back then they mostly played reruns of Julia Child and Graham Kerr. I
remember they were so desperate they had a nobody cooking instructor on
doing a French pastry show with a Swizz guest chef who looke dlike he just
got off the plane. The "host" kept butting in and trying to add ingredients
and the chef kept batting his hand away. It was hilarious.

I have his "Frugal Gourmet Cooks American" and it's not just a great
cookbook, it's a great, but brief, history of American regional cooking.

The earliest show I remember that featured him was on PBS in 1993. It
was over the airwaves because my city wasn't wired for cable back then
(why it took so long when all the surrounding areas had it, I don't
know). In any case, he made Shrimp etouffee and a Louisiana crab &
crawfish boil. I remember it because I'd never heard of etouffee
before and I'd never seen a propane burner like that.

I have five of his cookbooks. I'm pretty sure I'm missing at least
one, but I bought what I was interested in owning and ended up with a
collection - not because I'd set out to, it just ended up that way.

Great Chefs of New Orleans was a show that preceded Laggasse. That was
probably mid 90s.

Real know it alls wouldn't be watching any of these shows. Why would they? I
like Kelsey Nixon the few times I've seen her show.

I didn't know there was more than one host.

Cable wasn't invented then? We had cable when I was 8! So like 46 years it
was around. Was the show older than that?
