Ah, thanks. According to another link somebody posted now I know it's a
powder made of dried egg whites, with a bit of cornstarch and some food
gums. Not something I've ever looked for or would buy personally. Using
fresh egg whites to make meringue is pretty easy - but then I'm not
running a bakery and/or making hundreds at a time ;-)
