Default Potato peels

I peeled some russets Saturday for mashed potatoes, and I reserved the
skin. This morning I made my wife home fries, but fried up the peelings
for myself. They were crispy and delicious with two OM eggs on top, a half
of an avocado, and lots of salsa purchased from a local Mexican restaurant,
Pueblo Solis. Their food is pretty bland, but they have nice salsas.

As long as there are no "green" peelings as in "sunburned" there should be no problem. However, in our "neck of the woods" we just feed 'em to the hawgs.

In Denamrk it is pretty common and "considered fancy" to leave the skins on. There's even products sold like a glove to wear to scrape the soil off teh potato skin.

My italian wife finds the practice difficult. She is used to vacuum packed clean taters.
