Default PING: Wayne B. (Thai Coconut Soup recipe)

Hi Wayne!

Just wanted to let you know that I've made your Thai Coconut soup
recipe a couple times now and have really enjoyed it. We had it as
the soup course when my parents were over for dinner and both of them
commented VERY favorably on it. (If you only knew how difficult that
was to achieve... ;D )

I did tweak it some because I didn't have any citrus leaves and I
wanted to add more chicken stock, but that's about it. It's
delicious, thanks for posting it!

THAI COCONUT SOUP

1 (13 oz.) can coconut milk
1 (13 oz.) can chicken broth
2-3 stalks lemon grass
2 citrus leaves
5-6 Thai red chili peppers, diced
3 scallions, diced
1-2 chicken breasts, boneless, cut into sm. pieces
1 tbsp. red chili pepper sauce
2 tbsp. fish sauce
2 tbsp. fresh lime juice
1/4 c. fresh cilantro, chopped

Simmer first 7 ingredients (up to and including raw chicken) for about
15 minutes. Add chili sauce, fish sauce and lime juice. Turn off burner
and allow to sit awhile before serving. Add fresh cilantro just before
serving.

Ariane, thank you so much for the feedback. I'm glad to know that both you
and your parents enjoyed this. I actually made this for a small dinner
party just a couple of weeks ago. I agree, it needs more chicken broth
than the recipe specifies. It's a good soup...I'm glad I found the recipe.

No problem, Wayne. I try to let people know when I've made
something of theirs, but I don't always remember to say anything. :-}
And I thought now that the weather is turning cooler in many parts of
the U.S., someone would like to try this one out. It's definitely a
keeper!
