Our awesome PTO gave us an international lunch today. Parents donated
dishes. Suggested categories were American, Mexican, Caribbean, Italian, and other European. Those categories are broad enough that the theme was basically "food and plenty of it." Our volunteers did an amazing job. I know I'll forget many of the offerings: fried chicken, potato salad, pasta salad, homemade tortillas, guacamole, Tex-Mex seasoned chicken and beef, salsa, seven layer dip, tortilla chips, taco toppings, tabbouleh, picadillo, rice and peas, jerk pork sliders with lettuce and pineapple, Cuban sandwiches, pineapple/coconut rice, antipasto toothpick, tortilla soup, chicken satay bites, baked ziti, lasagna, bread, German potato salad, fruit, green salad, banana pudding, strawberry shortcake, German chocolate cake, churro cheesecake, and much more. There was so much food that they called us back to make take home plates for dinner. My lunch: tabbouleh, picadillo, rice and peas, pineapple and coconut rice, jerk pork slider, chicken satay bite, homemade tortilla with guacamole, salsa, and onions, and banana pudding and fruit for snack/ dessert later in the day. I tried to stick with foods I don't eat often. Took home: Cuban sandwich, potato salad, bread, antipasto toothpick. I don't think I will be hungry enough to eat it tonight. Tara |
