Has anyone here made a potato salad using roasted potatoes? I found a
recipe that calls for them. Some of the people who made it and reviewed it said that they tossed the potatoes with Dijon, salt and pepper before roasting for added flavor. I will look for that Just Mayo that sf mentioned. I see now that Earth Balance also has a mayo out that is dairy and egg free. I should be able to make this salad pretty close to as is. It does call for boiled eggs which I can't use in my portion but perhaps I will just make part of it without and part with. Also has bacon in it. Can't go wrong with bacon! And I think I will add fresh parsley even though it isn't called for in the recipe. Some of the reviewers said that they added herbs. Apparently when roasting the potatoes until crisp it adds a new depth of flavor. Some people added caramelized onions as well but seeing as how I am the only one here who really likes those, I will stick to the green onions that the recipe calls for. |

Roasting potatoes to crisp with some herbs, etc sounds like a good start, but I've never tried it. I also caramelize onions often (you aren't the only one here that likes them) but have never used them for potato salad. Sounds like a good experiment for maybe a very tasty potato salad. And as you mentioned, nothing goes wrong with some bacon added. :-D G. |

Once I go to the trouble of roasting potatoes I'm not about to screw up their crisp exteriors with dressing. And roasted potatoes are too soft inside for slicing. |

That's an interesting idea, using roasted spuds. The other ingredients sound okay too, although I'd use either bacon or caramelised onions - but not both of them. But that's just me. |

And as you mentioned, nothing goes > wrong with some bacon added. :-D I meant here in this house. They do eat the caramelized onions but they don't love them like I do. I also think you would want the crunch of green ones in a salad rather than those but I could be wrong. |

The potatoes were cubed to about 1/2 inch pieces before fried (they appeared to be pan fried, not deep fried). The dressing was some sort of mayo mix that was very good. Somewhere along the line bacon was added. The potatoes were very crisp and I'm sure that was because they weren't mixed with the dressing until ordered.
