I was craving a bacon cheddar omelette and for strange math reasons I
limited myself to two eggs (only four eggs were available at the time).
Well you can fit about 4 or 5 medium-small pieces of broccoli inside a
two-egg wrapper so of course I went for about twice that amount, plus
the cheese. It ended up being nearly crepe thin in a couple of places.
I cheated at the end and nuked it to kill the Salmonella lurking deep
within.

Lunch went much better - steak and assorted veggies on the grill.
Hard to mess that up.

Going with the egg theme, we're having quiche tonight.

I am haunted by Andy and that's why you responded with something about
an English muffin

he may also have had a part in the broccoli/bacon mixup

I would skip the milk and take the avocado... but tomorrow's breakfast
will be lox and a bagel with the requisite cream cheese. No capers,
possibly onion (but probably not). My needs are simple.

Tomato, onion and cheese on sourdough toast here for brekkie this
morning. I have some lamb chops defrosting for dinner - I do a braise.

Nice Chicken Chasseur for us today.

Yesterday I made pasta. The sauce was onions, garlic, tomatoes, red wine,
chicken stock and chopped (home made) meat loaf. We don't like minced meat
in our sauces and I found the meatloaf works really well.

My refrigerator and freezer are stuffed with odds and ends that I'm
trying to use at least semi-creatively. Wanted to make lasagna
yesterday in an attempt to get rid of a couple small portions of
hamburger and a couple of (chicken) Italian sausages.... but grandson
wanted quiche (what kid says that?), so we made it instead. He did
most of the work and I babysat the oven while it cooked. We'll make
pasta today and assemble the lasagna later on.

Now that's pretty interesting...you used chopped meatloaf in your
sauce. I think maybe I *would* like to buy the property next door
from your neighbor...just so I can 'ferret' myself into your house for
an occasional dinner or two. eheh :-D

Have you ever combined zucchini and carrot? It was a popular combo
15-20 years ago.

I had cut up a zucchini using the julienne disk of my FP when we made
pizza and didn't use it up, so I used the same disk to cut up a carrot
and combined them for a vegetable side. I liked the fine julienne
rather than the usual rounds or larger hand cut julienne that I
usually do.

lol you would be welcome) If it helps, my meatloaf consists of beef,
pork, bacon, onion, mushrooms and my homemade wholemeal breadcrumbs.. Oh yes
and eggs) I don't cook it as a meatloaf these days, I make them into
balls and bake them like that. Sometimes I will serve them with gravy, or
in this case I chop them up into sauce.

No, it is only just recently I have been cooking zucchini that we actually
like I usually mix it into stuff so it is not too obvious and the chunks
will blend well.

I am not usually a meatloaf or meatball fan - so I've had meatballs
(that I actually liked) languishing in the freezer for way too long.
I should do what you do and chop them up to use in a tomato sauce.

Thanks for the idea.

Hope you enjoy) I make mine with the intention of doing just that) I
have some venison meatballs in the freezer which he likes me to chop up in a
frittata or spanish omelette

That sounds really nice, not a fan of meatloaf normally but I'm sure
in a sauce like that it'd be delicious.

Try it? I am not a fan of meatloaf per se, but I do like my mix. As I
said, I usually bake it as meat balls and freeze it. That way I get a nice
crust all around each one. I never did enjoy meatloaf slices.

Yes, not enough caramelised meat in meatloaf... whereas meatballs have
enough
