It was recently aked in this group if refried beans are actually
fried. Damn Skippy! I had a couple left over flour tortillas and a single beer. Perfect for a breakie of huevos rancheros, a longtime favorite. But, no refritos! Hmmm.... but I jes happened to have a big ol' bowl of Cajun red beans in the fridge, sooooo.... I put red beans in a hot skillet w/ a good dollop of bacon grease. Mashed 'em up good with a fork and added some New Mexico chile pwdr, grnd cumin, cayenne, and "fried" 'em up good till jes the right consistency. Cooked up my eggs, dosed all with Chulula and chowed down. How was it? Not often I come across refritos w/ chunks 'o andouille, but it only made it better. ![]() nb |
