Default Giardiniera pickle.

Does anyone here know much about Giardiniera pickle?

According to Wiki, Italian giardiniera is also called "sotto aceti",
which means "under vinegar", a common term for pickled foods, and
includes peppers, onions, celery, zucchini, carrots, and cauliflower.

It is quite easy to buy prepared Giardiniera but I've never seen it
include onions, which would seem a good idea. However, preparing English
pickled onions appears to need a long steeping in brine and I wonder if
anyone knows any brands that include onion?

I make my pickled onions in malt vinegar and have never brined them.

Giardiniera is a vinegar pickle, not brine... there is no reason one
couldn't add onions as an ingredient in giardiniera... use
small/boiling onions and boil them some first to make them easier to
peel. Some giardiniera is made up very elaborately, in fancy schmancy
jars... actually a work of art... I remember them in Italian delis in
NYC.
