It can work. Don't know if I've ever done it with spaghetti, but pasta spirals, meat and tomato sauce, and avocado works. Salad of tomato, avocado, and greens would work with pasta.

I'm much more likely to do the above type of things with rice rather than pasta, but pasta will be fine.

Avocados taste so good, how could you go wrong? Green spaghetti is
popular in the Hispanic community, you might try that some day.


1 lb. spaghetti
2 poblano peppers
1/4 cup chopped cilantro, optional
2 garlic cloves
salt and pepper, to taste
8 ounces sour cream
1/4 cup milk
1/4 cup water
chicken bouillon, to taste

Cook your spaghetti. Blister and char the poblanos, put in a plastic bag
to sweat, then peel, remove the seeds and veins.

Chop the garlic and cilantro

Blend the peppers, garlic, cilantro, salt & pepper, sour cream and water
until creamy. Pour the sauce in a pot on medium-low heat and bring to a
boil, add bouillion.

Add the spaghetti to the sauce and let it simmer for a few minutes, add
more water if you do not have enough liquid. Add cilantro and serve.

how do you "blister"? I'm still new to this "cooking" thing. Can I
substitute cottage cheese for sour cream? Also, cilrantro bothers me
now, can I use spinach instead?

All my experience with avos suggests any kind of heating spoils the
taste <shrug>. Aside from being on something like hot pasta, of
course.

You char the peppers until they turns black.

If you do not have gas burners, put the peppers on a baking sheet and
broil them until they char.

Feel free to omit the cilantro, it is there for the flavor, so I would
skip the spinach. You could use cottage cheese, why not.
