Default Wow - dinner was good tonight 6-29-14

I used the salmon recipe I found on Koko's Pinterest board.

http://www.paleoplan.com/2009/12-03/...t-cream-sauce/

The only thing I changed in the recipe was lemon to lime. I used all
of the zest, but only used 2T worth of lime juice (not all of it).
Actually, I stretched the truth... I have coconut oil, but I didn't
feel like digging around in the refrigerator for it, so I used peanut
oil instead. Sunflower oil would have worked too.

That looks delicious, and I seem to like most recipes that contain
coconut milk.

I laughed when I read this.

So you're following a recipe that called for coconut oil. You have it
there but "didn't feel like digging around in the refrigerator for it,
so I used peanut oil instead."

How lazy is that? LOL! You're turning into Julie.

Lazy? Okay, if that's what you want to call it. I call it the
ability to make switches that don't spoil the essence of a recipe.
She's gone Paleo and has to use coconut oil. I haven't gone Paleo and
don't need to use it. Peanut oil and coconut oil both have high smoke
points and I didn't complain about anything. So , kwityerbitchin -
you're the only one complaining here. I absolutely LOVED the recipe
and will make it again.

PS: The need to switch lemon to lime was divine intervention and I
will continue that variation because it was so frackin' delicious.
Please try it sometime and feel free not to alter the recipe in any
way, shape or form.

You (and your little group of supporters) completely missed my point.
Of course people substitute ingredients all the time. Get real.

I wasn't commenting on your switch of oil.
I was laughing at your *reason* for the substitution and here it is
again:

"I have coconut oil, but I didn't feel like digging around in the
refrigerator for it, so I used peanut oil instead."

That sentence is what made me laugh. Sounds very lazy to me.

Even more funny is when you and your little gang then started saying
that I've turned into Sheldon or a combo of Steve and Sheldon. All of
you need to lighten up a bit. good grief.

"You and your little gang?" No need for paranoia. LOL You come up with
snarky remarks, like "what sf is doing sounds lazy", saying that "she's
starting to sound like another person" on the group, and then when someone
comments back in the same tone, you say...I was joking. So, we were all
joking and YOU need to lighten up a bit. How's that?

I don't even *have* any coconut oil. That must earn me the lazy shopper
award.

LOL, and I don't make mine from coconuts, so I'm extremely lazy.
