We went to a berry farm last week and I now have many pounds of olallieberries and raspberries in my freezer. What a kick! It was way too easy to overdo it and that is what we did.
I freeze fruit throughout the Summer and we eat them on ice cream or yogurt or in smoothies throughout the Winter. This time, though, I have way more than I will use. What to do? I can make pie (and I do put vodka, has to be iced ) in the crust and probably will do that, but I could use some different thoughts from y'all. tia Nellie |

I have no clue what the first ones are but I used to get tons of raspberries. I would make my biscuit dough which was just regular biscuit dough but I added a little butter and instant potato flakes to give it a better texture. Roll out thin, cut in circles. Place on greased baking sheet and top with raspberries and a little sugar. Don't put in too many or too close to the edge. Top with another circle. Use a fork to seal the edges. If you're really feeling lazy, you can just do a larger circle, fill half and fold over. Sprinkle with sugar if you want and bake till golden brown. Drizzle with glaze. |

I've never used potato flakes in biscuit dough, but will try it, thanks! Nellie |

Lightens up the dough. |
