Default Chicken Livers and Rajas, that's what's for dinner.


Tonight's dinner was chicken livers dusted with rice flour and sauteed
in butter. I served them with my paleo version of Rajas and some
grilled asparagus.
For the Rajas I roasted, stemmed and seeded the poblanos, then sliced
them into thin strips. In a saute pan. I melted some butter and added
about a couple of cups of organic corn, salt, pepper and the strips
from one and a half poblano peppers. I then lowered the heat and added
about 1/4 cup coconut cream, mix, mix, stir, stir.
The "real" Rajas recipe calls for cream and cheese, and more cream. I
used coconut cream and it was rich and creamy and delicious.

These sound great. I love chicken livers, especially chopped chicken liver sandwiches. When in New York earlier this year, we went to Katz's Deli twice just for that and the second time I actually got one to go for the next day's outing. We went to Carnegie Deli too, but there liver sandwiches were beef liver, so we took the subway and walked, in the pouring rain, to Katz's, lol. That is just to show you how serious I am about chopped chicken liver sandwiches.

Your recipe sounds good, am keeping it to try one day, thanks!

I like it because it's lighter than all purpose flour, that I don't
use, and it provides a nice light crispy crust. Not to mention that is
fits into my eating plan best.

I'm 90% paleo and white rice is not an "issue" for my health like
other grains are. I still don't eat gluten free processed foods of any
kind.
I'm eating, with great results, resistant starch foods that many
mainline paleo advocates embrace. My litmus test is my gut, if it
works for me and my health, I'm onboard.
I'm also heavily into fermented foods and probiotics, which I think is
the key to it all. (I make my own ferments and probiotics)

One good thing about making your own sauerkraut, is you are the one
that judges how you like it. When it tastes good to you, it's done. It
develops a further depth once refrigerated.
I don't know if you are on facebook or not, but there is a fermenting
group "wild fermentation" that's a wealth of information fermented
foods. I make some of the best pickles_ever_with fermentation, just a
salt brine and spices, no vinegar.
Also, a mix of vegetables such as cauliflower, celery, onion, green
beans, or your vegetables of choice, brine, spices of choice, ferment
for a few day is absolutely wonderful and you get all the great
probiotics.
