Default creamy pesto salad

My attempt at pesto salad dressing was disappointing. I don't think I
really like the Classico pesto all that much. Too oily and basilly. The
dressing they make at Rocky's is creamy and greenish but light green and
does not seem oily. How is it so creamy? Do they put it through a high
speed blender? You can't see any basil in it, and it's not oily.

I used buttermilk and little mayo with the Classico pesto.

They probably make their pesto with a mayo and/or sour cream instead of olive oil and they probably use a commercial processor or blender.

my ex said to put equal parts mayo and buttermilk, and drop of mustard
if Miracle Whip (because it's sweeter).

Is there a way to suck out some of the oil? I like olive oil, but the
Classico has too much.

You could put the pesto in a coffee filter in a strainer and let it sit overnight over a bowl to catch the oil, that should do it.

The other thing he can do is to not stir it and pour the oil off the
top.

IMO: Anyone who thinks Classico is too basily tasting either doesn't
know what basil pesto should taste like or is using too much for the
intended purpose. He can always add an equal amount of parsley to
tone down the basil flavor. Parsley is probably the flavor he's
looking for anyway.

Thanks. That sounds like a good idea... but I don't have any coffee
filters-- not a coffee drinker. But they are pretty cheap, aren't they?
Will add to my Kroger grocery list.

For pesto without oil use the scrapings from the bottom of your
lawnmower... smells and looks the same to me.

finally, a lol induced from Brooklyn... been long time coming.

damn squirrels are stealing my tomatoes again. 4 in last 3 days. Guess
I'm going to have to go pick the green ones. I don't care so much about
the early girl ones, but it's been starting to take the beefsteak ones
too.

Get yourself a pellet gun or a .22 cal rifle. Start eating squirrel
meat with your tomatoes.

I never see squirrels in my garden, barn cats. Besides, squirrels
much prefer to scavage/ravage all the hickory nuts, acorns, and pine
cones. It's much better to lure squirrels away from a vegetable
garden by putting out some peanuts. Peanuts are cheap and squirrels
really don't like tomatoes, only time would be during a drought
because tomatoes contain water... so if water is scarce set out a
birdbath... gotta be smarter than a squirrel.

You gave me an idea. Didn't have coffee filters, but used couple paper
towels. Now to mix the basil... I do have a stick blender. Guess I
will try that. With some buttermilk and mayo... or, just need to go
out to eat at Rocky's more often.
