I want to make one that is like what I had at Tommy's Joynt and that
definitely wasn't smoked. I don't have a smoker anyway, so it's moot
point.

did you ask their chef how he cooks it? you would be surprised how often
they will tell you. But you have to be a quick listener.

Chef, what chef... or do you mean the man cutting the meat? Of course
not. I didn't even start thinking about it until I woke up the next
morning wanting another brisket sandwich.
