Default Dinner last night



I turned zucchini into faux spaghetti.

Garlic, bacon and sun dried tomatoes sautéed in butter. Added zucchini and
parmesan cheese and cook through gently.

Simple but delicious Leftovers were even better this morning - cold)

I've turned zucchini into faux pasta too. I made a lasagna using it
instead of the pasta noodles. Several of my friends asked for the
recipe. It *is* very good! :-D

We were running a little late. I picked up some corn at the local stand,
stared the gas grill and threw the corn in, then went inside and made a
dry rub of salt, pepper, chili powder, cumin and dried parsley and
applied it to some small chicken breasts. I took them out and threw
them on the grill while my wife made a Greek salad. We ate on the patio
on a beautiful summer night.

I do that too. I cook the slices on a griddle first to get the lovely marks
and flavour!

Any flies or mosquitoes out there? This is why I don't eat outside.
I prefer to time my meals with a good tv show or movie.

Sounds nice, Dave. But it's too friggin' hot to eat outside where I
live. I've never eaten outside here. Then again, I don't have a table
with chairs on the patio. Just a couple of comfortable chairs to sit
in, when it's not 90°F outside.

No problems with mosquitoes on the patio so far this year, though this
had been the worst year for mosquitoes in a very long time. I have had
more skeeter bites in the yard this year than I have in at least 10
years combined, and going into the woods is even worse. This is the
first year in many that I have been regularly applying repellant. That
started off because of ticks. I never knew what a tick was until about
10 years ago. Now I am in the habit of tick checks every time I come
home because I was finding 3-4 of them on me every time I took the dog
for a walk. I want to go to the vet and get some of that stuff you put
on the back of the dog's neck and use it on myself.

Flies are not usually a problem until August. We eat outside almost
every night from May through to September.

My parents loved liver and onions. It was one thing they didn't ask us
kids to eat. I don't remember ever having to taste that dish... I think
they assumed we wouldn't like it. (I don't remember what my brothers
and I ate when mom cooked liver and onions.)

To this day I've never attempted to cook calf or beef liver.

My DIL did that and said it was delicious too. Both she and I just
have the Julienne peeler though, so I don't know if she ever did it
again (feeding 4 is a lot of work for that little thing). I was
thinking about getting her the one in between the peeler and the
spiralizer to see how that goes. Her place is way too small to be
able to store the spiralizer and still have it anywhere handy enough
to use.

Thick pork chops (boneless, off the loin) with a sherry, sour cream
gravy and mushroom gravy, baked sweet potato and a mixture of baby
yellow & green patty pan squash + baby zucchini that had been sautéed
in butter.

We have a little 10' x 10' screened gazebo. If it's particularly buggy
outside, we'll spray a bit of raid in it, zip up the screens, and wait
for a bit. It will then be lovely for eating dinner and sitting the
rest of the evening.

I don't think I'd like that texture for cooked zucchini (probably cook
up too limp), I think it work much better that way dressed in a cold
salad/slaw. I picked my first zuch harvest this year, not the
greatest gardening year, too wet. I'm going to crinkle cut into coins
and stir fry with baby green beans, with a spicy garlicy oriental
sauce to accompany fried pork chops - veggies will deglaze the chops
pan. I really only offered up this picture as an opportunity to
display untreated veggies, I use no chemicals so there are always some
with evidence of critters/insects... when you see all those perfect
unblemished "organic" veggies displayed at market be well assured they
are NOT organic, no way. I'll just pare away those bits like eyeing a
spud... these are organic as it gets yet still not due to run off from
higher ground:

Thanks Ophelia, it turned out pretty good. I gave the zucchini a quick
saute in some butter then topped with the meat balls and sauce.

Calves liver for me. I'm lucky that they sell it frozen in my grocery
store. Each slice is individually packaged in cryo. MOF, I think I'll
put some on my shopping list for tomorrow.

Agree. Beef can be tough and strong tasting. Calf's liver is the one
thing I require cooked in bacon fat, so I fry the bacon first and then
the onions and finally cook the liver in rendered bacon fat. Mashed
potatoes are another "must have" with it for me.

I do that too and it is delicious) The last one I cooked a little garlic
with sun dried toms, a little bacon and parmesan. Next time I will leave
out the bacon I think.

I meet friends for dinner on Fridays at a food court, and have the usual China Panda stuff- Beijing Beef, Chicken with string beans etc.

I drove to a farm and picked up fresh Yukon Gold potatoes, green
beans, tomatoes, pickling cukes, peppers and sweet corn. Near home I
stopped for a rotisserie chicken. Cut the corn off the cob and fried
it in butter while steaming the green beans, which were also served
with butter. While the vegetables for that meal were cooking, I was
also grilling potatoes, peppers, onions and carrots for the following
evening's meal...but they turned out so tasty, we sneaked ourselves a
portion of them with the chicken, beans, and sweet corn.

We ate outside in our umbrella/screen house.

Easy tip: repel flying insects with an electric fan. They can't
maneuver in the breeze, and you don't have to apply insect repellent.
I keep a couple of fans on standby whenever we entertain outdoors in
the summer.
