Default Nutella Cookies 7-31-2014

I made flourless Nutella Oatmeal Cookies today. Had to improvise
because I didn't have exactly what the recipe called for. Used two
large eggs because I didn't have extra large and whizzed regular
oatmeal in the Vitamix because I didn't have quick cooking. They look
good and I can't complain about the flavor, but the mouth feel is a
bit dry. Next time I'll either use more Nutella or less oatmeal.
Would it benefit from a little oil or melted butter too? Am I on the
right track?

You can make them just with Nutella and an egg - that's what we do. I
think it's one cup Nutella + one egg, bake at 350 for 10 minutes.

I know - but I wanted to try this recipe for a change. If you haven't
tried them, flourless peanut butter cookies are really addictive.
