I did a little grocery shopping today and decided to have a hummus wrap for
dinner. But... Our warm and slightly muggy weather has now changed to cold and super muggy weather. My body is wanting soup! What to do, what to do? I am sounding like that Pooh Bear person now. I don't really have any stuff to make soup although I do have a few cans of soup. Those don't sound good. Perhaps I will just have the hummus wrap along with some vegetable broth? Hmmm... |

Mexican Fiesta Soup with Roasted Tomatillo and Cilantro Pesto http://www.marthastewart.com/356048/...cilantro-pesto Made half the recipe. Added half a pound of reconstituted dried (small white) beans. Used half a can of diced tomato and salsa + an entire jalapeno and 1/2 a lime, juiced.... didn't measure, but probably 2 cups + of fresh corn that had been "fire roasted" and cut off the cob (I reject what the recipe suggests). I would have also added chicken meat, but didn't have any and didn't want to go shopping. It was good anyway - I used a *very* rich homemade chicken stock, but I would have liked some chicken meat in there too. You'd substitute vegetable stock. -- Avoid cutting yourself when slicing vegetables by getting someone else to hold them. |

I have opted for the flat bread with a little hummus as I have a feeling it won't be with me for long. ![]() |

The soup was the meal for us, no extras such as bread or tortillas. Like I said, I didn't follow the recipe to a T. I have avocado but it was suggested as a garnish - so I didn't bother. Well, I am the only one here that likes that and I can't eat it. There are many times that I have small amounts of vegetables that are not really enough to do much with except to put in a soup. Sometimes I also have a bit of leftover meat. Or even some leftover pasta or rice. Now if I plan ahead of time to make soup, I will buy specific things. Otherwise it is "clean out the refrigerator" soup. Never the same twice. My pot pies have very specific vegetables in them. Always onions, celery and carrots. Sometimes peas. |

I said when I use a recipe that calls for chicken broth but I sub in vegetable, the flavor profile isn't right. I certainly do use vegetable broth in vegetable soup. As it turns out, I am sick. Might be a migraine. Am feeling some better. Still not much appetite but I didn't throw up as I feared that I would yesterday. I wound up eating flat bread with a small amount of hummus. Then later I had a can of beef and barley soup. Thanks! |

Of course I have beans of all kinds and lots of canned veg. I wanted soup but didn't want to make a big pot of it because it is summer and we are set to have hot weather again. When I make soup, I either use up small amounts of veggies from the fridge or I buy them specifically. Yes, I could use all canned stuff and sometimes have but that would make a big pot. As it turned out, it wasn't all that cold. Temp. was 65 but perhaps it felt cold because we had a rapid drop in temp. from almost 100. And I am sick. I think I was chilling but didn't realize it until the stomach pains began. |

I got soda pop but that was last month. Surely you don't think that I still have that! I have to buy soda pop every week. I did stock up enough to have some for two weeks. I did say that I was finding really good prices on canned goods. I didn't buy them because I already have plenty. I am trying to use those up now and get fresh for the winter. But as I said... I have no need for a big pot of soup. It's summer and I am here alone. If I were going to make it just for me, I'd pay through the nose and get stuff from the salad bar to make a small pot. |

But I know that peanut butter soup has been around for yonks. I have read recipes for it in the Good Old Days. |

I used to try to eat peanut butter on toast. Just does not work for me unless I am certain that the toast is very cold and then there's really no reason to put it there, IMO. Just eat it on bread. For that reason, I would never use it in a cooked dish. Exception being some sweets that are served cold or at room temp. |

This seems to be a mild one. Not the full blown aural stuff. And when it struck, we were having lightning. What I saw, didn't quite seem like lightning nor was it as pronounced as the aura that I sometimes get. But because I was able to lie down right away, I think it kept it from progressing. |

I didn't have ingredients for the kind of soup that *I* would want to eat. Particularly yesterday when I wasn't feeling well. Or in the quantities that I would have needed. As it turned out, I had no broth whatever, that I can eat. There is one can of chicken broth out there. My cans of vegetables are all around the 14-16 oz size. Not really sure what size they are now and not going to check but I do know that one can split between two of us is what we eat for dinner. Yeah, it's a little more than one serving each but we love our veggies. When I do canned veggies for the three of us, that's where I have that little bit left over. And when I get enough of those, that's when I make soup. Sure, I could open several cans of things and make a big pot of soup but a big pot of soup is not something I want in the summer. I was very low on fresh foods and I wanted it to be that way. I did stock up on a few things at Costco today and I also stopped at the grocery store for some canned soup because I mostly only have bean with bacon. I do have some others but they are not things that I particularly like such as Campbell's tomato. I do like tomato. Just not theirs. Also have chicken and noodle which I can not eat. Was rather appalled at the price of canned soup at Albertsons. $1.99 each! Will remember to get more next time I go to Winco as it is far cheaper there. Do you always have to get up on the wrong side of the bed? |

Take the soup you didn't eat and put it in the freezer. Then the next time you have a problem like this you can take a single-serve container out of the freezer and eat it. Like the rest of us do.
