Default Easy cheese cake?

I've been hungry for cheese cake for several weeks now. Checked bakery
section at Walmart last week but it is VERY expensive - $7 for a little
cake. I looked in my _Joy of Cooking_ but it looks VERY difficult to make,
especially for a bad cook like me.

Anyone know an easy recipe? Probably not but figured it couldn't hurt to
ask.

It's very easy to make. Use a graham cracker crust and use the recipe
on the label of Philadelpia Cream Cheese.

Where is that? With the Jello or the cake mixes? I looked for something
in the cake mix section at Walmart last Saturday with no success. Won't
be going again until this Saturday.

I think that's the one my mother made on rare occasion when I was a
kid.. no bake cheesecake. It wasn't bad.

Cheesecake IS very easy, don't let a single recipe scare you away. There are good easy recipes in this thread.

I will say I love Martha for nearly all her recipes (never had one fail and they are always good) but I never make
anything that calls for sweetened condensed milk...except Key Lime Pie. There is just something about it in the can
that makes me go "ewwww." ;-))

Put one 8 oz package of cream cheese in a bowl and beat in one cup
powdered sugar until smooth. Add about a cup of whipped cream or whipped
topping and gently mix. Pour the mixture into any pre-baked pie crust
that you like and refrigerate for an hour or two. Cover the pie with a
can of pie filling and serve. If you got an easier recipe, then I'd just
have to shake your hands.

If you use cherry pie filling, it sounds a lot like the old standby
"Cherries in the Snow". Mom used to make it all the time back when I was
a kid.

I have never heard of this before but it is the same stuff. Pretty damn
tasty stuff it is too. It's also a very pleasant name.

This recipe was written on an index card in my mom's recipe file box. I
wonder what happened to that box. Boy, I'd sure like to see that one
again. Old memories would come flooding back.

Default Easy cheese cake?

When I make cheesecake, it has no crust. This is my favorite cheesecake
recipe of all time.


Cheesecake

(All ingredients should be room temperature)

4 (8 oz.) packages cream cheese
4 large eggs
1 1/2 cup sugar
1 tsp vanilla
1 tbsp lemon juice
2 tsp lemon zest
16 oz sour cream
1 stick butter
4 tbsp potato starch, (or use 2 Tbsp cornstarch and 2 Tbsp. flour)


Preheat oven to 325 degrees.

Move two racks to the lowest two positions in your oven. Place a pan
of hot water on the lowest rack. Line the bottom of a 10" springform pan
(or any deep pan) with parchment paper or aluminum foil. Spray sides and
bottom with PAM spray, or use cooking oil. I use a silpat pan.

In a large bowl, beat cream cheese until smooth, then add the sugar,
beat until light and fluffy. Scrape the bowl down and add eggs, one at a
time. Mix until the eggs have been absorbed.

Add potato starch, then the vanilla, lemon juice and lemon zest. Do not
over-mix. Add butter, mix until blended. Move mixer to a lower speed
and add the sour cream.

Pour into prepared pan. Bake at 325 for 1 hour. Turn the oven off and
leave in oven for 1 hr. Remove from oven and let it sit at room temp
for about 2 hours. Refrigerate until chilled, about 4 hours. Do not
cover with plastic because it might sweat.
