After the sliced bologna or ham or whatever has been in the 'fridge for
a few days, it can develop a coating that makes the slices stick together but feels slippery. Since it washes off your hands (or the bologna) easily with cold water, I don't think it can be any sort of fatty stuff exuding from the meat. Whatever it is, eating it doesn't cause even a twinge of stomach upset. My suspicion is that it is a bio-film, maybe a coating of something like lactobacillus something-or-other. Anybody know for sure? Isaac |

If you are getting meat cut at the deli, you need to eat it within a day or two. |

Holding sliced deli meats more than 3 days is risky... deli meats purchased in sealed plastic like Oscar Mayer bologna is processed robotically under clean room conditions so they are safe up to a week after opening, of course depending how refrigerated at market and at home, I buy some factory pacaged deli but still don't hold them more than three days after opening, and I always check the exp date and seach for those furthest out. But cold cuts sliced at a local deli can be risky even at the time they're sliced, not all delis are clean nor do they follow correct food handling procedures. That slime is typically indicative of listeria, I would toss it and not shop there again. I've became ill from small local deli foods, that's why I no longer patronize any deli other than Walmart's, they are extremely fastedious in all aspects and have huge turnover. Now some of yoose complain but the Super Walmarts I shop are terriffic stores, I will assume like with any other chains not all Walmarts are equal... I prefer the Walmart north of me, the one to the south is not as nice.... I'll buy packaged groceries there but not deli, their deli clerks are not up to my standards of cleanliness... any deli that reuses plastic wrap I keep far away from. When meat is going to be sliced the plastic wrap is supposed to go in the trash, the first slice tossed, and rewrapped with new plastic. If you look in the meat case and deli is sitting in fluid don't shop there. |
