Default Filipino ceviche

When I was working in the Philippines, I used to eat a lot of Filipino
ceviche.

On Monday, I'd give one of our drivers (we weren't allowed to drive
there) $6. On Tuesday, very early, he would go down to the docks and buy
a freshly-caught milkfish. He would deliver it to his aunt ("my
auntie"), who would that afternoon make the ceviche. Then, on Wednesday,
he would bring in the ceviche, which I would enjoy for the rest of the
day, much to the disgust of my cow-orkers.

I think I will try to replicate this recipe, using a version from the
net that sounds good, with tuna. I'll report back how it goes, if I survive.
