I used to make some BLT bites for parties. Start with cherry tomatoes. Cut
off the tops and reserve. Scoop out the insides. Turn them upside down
onto paper towels for about 20 minutes or so to drain. Fill with a mixture
of cooked, crispy and crumbled bacon mixed with finely sliced green onions
and mayo. I have seen recipes that have parmesan added but I didn't try
that.

Set them on a platter of curly parsley. The parsley keeps them from rolling
around. Put the tops back on and stab with a frilly toothpick.

These don't keep well. Best eaten within a couple of hours of making so the
bacon doesn't crumble.

I have seen a pic of bacon being used to make a taco shell. Not sure how
they did that but it looks good too!

They look great! I haven't had a BLT of any kind in years, I ought to
do something about that.

I like that idea, Julie! Thanks. You sent me to Google Images and
here is another variation on the BLT bites theme.

finely chopped tomato and lettuce filling these bacon cups. Green
onion would be a nice addition, but I'd sample the filling with and
without mayo first to see which way I liked best.
