Default Japanese salad dressing

I've been trying to find a salad dressing like the one my favorite sushi
restaurant uses and I think this is pretty good.

Ginger Dressing

It is actually called Carrot Dressing, but you don't taste carrot, just
the ginger.

1/2 cup chopped carrot
2 T mirin
2 T rice vinegar
2 t miso
1 T soy sauce (usukuchi if possible, otherwise light colored soy sauce)
1" cube chopped ginger root
2-3 drops sesame oil

T=tablespoon, t=teaspoon

Blend all ingredients;taste. You might like more miso or Mirin. Kikkoman
makes a light soy sauce.
