Participants are challenged to eat on no more than $4.50 per day, per person (the average allowance for food assistance programs), log their experiences, and reflect on the challenges and difficulties." I'm going to pay a lot more attention to this site from now on. Just clicking around, I see lots of simple but interesting recipes. I'm in a big food rut. I need some uncomplicated but healthy and tasty new things to try. And when you looked at the meat cases, far more space was dedicated to chicken than any other meat. It was quite popular there. My dad said they could get away with the high prices because there was such a demand for it. Years ago I used to talk to a woman online who lived somewhere in the South. I want to say TX but not sure. She would bulk buy chicken thighs when they were really cheap. I was living on Cape Cod at the time. I was amazed at how much cheaper her meat was than what I could buy. I also will never forget something that I once saw on one of those court shows. The just gave a scenario to a low income woman about what she would do if she had one chicken thigh. She had two small children. The correct answer was to take that chicken thigh and pad out the meal with some cheaper things like potatoes and divide the chicken between the three people. The woman then looked at the judge like she was an idiot. And then said since there was only one, she would just eat it herself and the kids would never know! Always amazes me when people can't think things through. One of the people who commented on the chickpea recipe said that he only had dried chickpeas and he didn't know how to covert them to the given recipe. Did he just have to soak them? Okay, maybe he didn't buy the chickpeas. Maybe they were given to him. But he obviously has the Internet. He could have looked up how to cook them. |
