My CSA had this on sale so I bought a small bag but now I can't find a
single recipe that calls for it! All of the recipes that take bread flour use regular bread flour and then if they are a whole wheat bread, additional whole wheat flour. Does anyone have any recipes that use this? I would even be willing to make something with eggs and milk in it for my husband and daughter if it would use up the flour. I could use the cupboard space! Thanks! |

There are not that many recipes for whole wheat bread that are made solely with whole wheat bread flour. A recipe for whole wheat bread that uses only whole wheat bread flour tends to be very dense and sticky/tricky to knead.. Recipes will call for a combination of whole wheat bread flour and white bread flour to overcome the problems. Also, most people do not care for the taste of bread made only with whole wheat flour. You can find recipes for oatmeal, rye bread and others that also use whole wheat flour in combination. When talking about baking bread, it is understood that you mean whole wheat bread flour. It would not be a good idea to try to make cookies or similar with whole wheat bread flour as it will make them tough. It is understood that when making something other than bread, you are going to use whole wheat PASTRY flour. Check Winco bulk bins and you will see both are available there. I believe that the supplier for the bulk bins is Bob's Red Mill. Janet US |

I use my ABM to bake whole wheat bread with honey. 100% whole wheat flour is nice for baking various muffins; carrot, zuchinni, raisin... add dates & nuts. |

The only other option for whole wheat is whole wheat pastry flour. . Recipes do not specifically call for Whole Wheat Bread Flour because it is expected that everyone will know that it means the stuff that isn't pastry flour. Whole wheat flour that isn't whole wheat pastry flour is bread flour,. Read it all again, slowly. Janet US |

And it is not understood to be that because other people are asking the same question. If they meant whole wheat bread flour and whole wheat white flour then it would say that. The recipe I have been using specifically calls for bread flour *and* whole wheat flour. Not the same thing. And yes, I know that it isn't pastry flour. And neither is whole wheat flour. Methinks you don't know what you are talking about. Whole Wheat Pastry flour is not the same as Whole Wheat flour which also isn't the same as Whole Wheat Bread flour. |

Then whole wheat flour, organic preferred. Since King Arthur seems not to make a whole wheat bread flour, they couldn't possibly put it in any of their recipes. cshenk is in my FK. And I thought she did gluten free? |

No. I just had no idea that it would be a problem for me. I can't find a single recipe that has a use for it. I have seen forums where people talk of using various ratios to swap it in but they couldn't guarantee that it would work. |

The people I referred you to are experienced bread bakers. You can probably add Gordon to the list. But I have found a recipe now. I will try that and use it up but I will not buy it again. It is apparently very hard to find. I see it for sale online and because it isn't commonly used must be why my CSA had it on sale. Live and learn. I used to make my own bread all the time but just used regular flour. All of a sudden I was seeing recipes that called for bread flour and I knew that I wanted whole wheat so when I saw it on sale, I bought it. Wrong thing to do! |

I use King Arthur's White Whole Wheat flour in my mainly KA All Purpose flour for bread. I sub about 2 cups of WWW for the AP in a 6 cup recipe. If anything, I get more rise that I did with all AP. BTW, KA's organic flours are on sale at my regular grocery, a small chain, for $4.98 for a 5 lb. bag. The all purpose is $2.98 I have stocked up on AP flour. This isn't BREAD FLOUR. It is WHOLE WHEAT BREAD FLOUR and you would not use that for cookies. I also don't EAT cookies. I'm diabetic. You also wouldn't use a whole wheat flour for cookies. You would use a whole wheat PASTRY flour and this isn't that! I did find a recipe. Only one. I will try that the next time that I make bread. |

Sometimes that works and sometimes it won't work at all. Bread making takes several hours and I don't want to waste all that time on a loaf that isn't edible. I do have a recipe now. I will make it. I will never buy this flour again. |

They have also been known to use bread flour and yet nobody has a problem like yours. If you want to make your diabetes and other intolerances that you and your family have an unspecified focus of in every post - then you picked the wrong group to do it in. -- Avoid cutting yourself when slicing vegetables by getting someone else to hold them. |

This is NOT just bread flour. You are NOT getting it! I am not the only diabetic in my family. We just don't eat cookies or much in the way of sweets. We eat healthy food. I do not think cookies are healthy. I asked for a recipe for the type of flour that I have. Again, it is NOT just bread flour. Nobody seems to *get* that. I already found a recipe on my own and I posted it here. So why are you still going on about it? |
