I'm looking for a digital temperature thermometer that will turn
on/off cooking appliances based on a digital setting and a temp probe.
Like a temp probe that will cut off the power of an appliance based on
what degree of heat the temp probe is sensing. IOW, turn off pwr to a
slow cooker when the temp reaches X deg F.

A slow cooker already has such a device, it's called a thermostat...
most cooking appliances contain a thermostat.
