Default A recipe to try!

I am watching this show and this looks really good! I don't have all of the
ingredients though. And not too sure how it will work for me. I do love
quinoa but the few times I tried it, I had high blood sugar. Has anyone
tried this?

There is? I thought I saw corn in the picture but I didn't see it in the
recipe. If it is just corn kernels, they could easily be left out.

Hey, don't expect me to keep up! LOL Okay, we'll let her leave out the
corn. At 1/2 cup cooked corn it's not critical to the dish. When I
said follow the recipe I was thinking more along the lines of not
subbing jarred salsa for the fresh tomatillo salsa.

Hey, you started this thread. Do you plan to try this recipe and report
back? You started right off with a disclaimer: "not too sure how it
will work for me. I do love quinoa but the few times I tried it, I had
high blood sugar"

You've already given yourself an out/excuse to not like or be unable to

You're not diabetic Jill. I try not to eat things that make my blood sugar
go high, even though quinoa is purported to be good for diabetics. I will
try it. I don't know when. I got the quinoa today and the nutritional
yeast will be here maybe tomorrow. I will have to buy some of the other
things to make it. Not sure when that will be. And I probably won't make a
whole recipe as most likely nobody else will eat it.

No, I'm not diabetic. I don't think you can paint all diabetics with
the same brush, either. Honestly, I do hope you try it, like it and
have no blood sugar spikes. As for "likely nobody else will eat it",
that's when they need to be fending for themselves in the kitchen.

And I don't think all diabetics are the same. As for your next remark, I
don't believe that for an instant. This would be a dish that I would make
for myself. Neither of them like tomatoes and Angela has a quinoa
intolerance. I can't remember if my husband ate the quinoa or not. I may
well have made it at a time when he wasn't living here. But he's not
usually a fan of stuffed vegetables. Unless they are stuffed hot peppers.

I don't expect them to eat bean burritos or tacos either. Once in a while
they will but those are things that I make for myself because I like them.
