Default Best fish taco ever

My neighbor and I went to lunch today at a little storefront called
Amigos. I had seen their sign out front that said that Tuesday was
fish taco special day. We'd been there before. It has maybe 6, 8
tables. The kitchen is right there at the back of the room, open,
just a counter separating patrons from kitchen.
The taco was on a fresh, home-made flour tortilla. The fish was
haddock, in one-inch chunks. The fish was super tender and juicy.
Very tasty -- I don't know what was used to maybe marinate it??? It
may have been dropped in the deep fryer for seconds, but it wasn't
greasy and had no coating. It had a bit of some sort of house sauce
on it that was super delicious, some fresh cilantro and a finely
shredded lettuce/cabbage with a little tomato, onion and some other
veggies. The taco was served with what they call pot beans and some
rice. Both sides are as individual as if they were made in a home
kitchen and not the usual Mexican stuff. I can't figure out how the
taco was made, what was in it besides the fish. I only know we both
thought it was the best ever.
The guy that serves you did a lot of the cooking. Who ever taught
these people how to cook and came up with the recipes is gold.
We've decided to go back for our February birthdays for an early
dinner so that we get two tacos. Can't wait.

The best one I ever had was the first, and it was just last summer. Our
favourite restaurant always has a couple of interesting daily specials
and one night it was fish tacos. The fish was pan fried and served on a
soft taco with a spicy avocado sauce. I have had fish tacos a few times
since then, but none have been anywhere near as good as that one was.

Sounds like a gem!

One of our favorite Mexican restaurants is actually in a grocery
store/meat market. They have a small kitchen in the back corner with
about 6 tables. Most of their business is take-out but we always eat
there in the store. The food is inexpensive and very, very good, the
portions are generous and they make their tortillas to order. They make
the best menudo in town.

Often, we are the only non-Hispanic customers in the place and that is a
shame. The people who line up at the Taco Bell around the corner just
don't know what kind of great meal they could be having for about the
same price.

Your mission, should you choose to accept it, is to get the recipes.

I'm afraid it will turn out to be like when you ask your mother or
other relative for recipes. They tell you everything that's in it
but it turns out that you can't reproduce it.

There was a "mercado y taqueria" here exactly like that. The woman who
owned it *might be* buying a new restaurant. I swear, if I were to win
the Megamillions, I'd hire her as our family's cook.

Screw 'em! Keep it a secret or you will never get a table there again I
guarantee. Anyone who eats TB has no sympathy from me.
