Yes, it's a bit much to be on high the entire time. Do high for an
hour to heat your cooking liquid, turn it down and check for doneness
at 6 hours. If it's not tender enough for you, let it go longer. I'd
just let it cook overnight and test it for doneness in the morning.
You want it to fall apart (shred easily), so it won't be over cooked.
