Default MW cornbread followup

BTW, this is Martha White's Self-Rising Buttermilk Cornbread mix.


I followed the basic MW "Southern" cornbread recipe on the package. I
used Meadow Gold cultured buttermilk(?). I added 1 med egg to the
single egg called for by the recipe.

It came out pretty good. I snagged a piece outta the oven and
buttered it. Hadda steaming bowl of red beans and an IPA to help
with the test. Not bad. The cornmeal in this cb/flour mix is
definitely fine. Might be too much leavener in the mix. I only let
the batter sit fer less than a couple mins and still ended up with a
rather airy conrbread. Not bad, though. Browned jes right, tastes
OK, not too dry or wet.

I'd rather use MY recipe with fine grnd cormeal and 3 eggs, but this
will do until I find the meal I want.

Try my tip I posted in the other thread about making your own 'fine grind' cornmeal.
