REC: My Jello Salad
 


1 large box of orange Jell-o
1 can (16 ounce) of crushed pineapple, drained
1 can (8 ounce) of mandarin oranges, drained
1 very large carrot, shredded
1/2 cup toasted pecan halves.

Prepare Jell-o according to package directions. Refrigerate until the
Jell-o has partially set. Stir in the remaining ingredients.
Refrigerate until fully set.

Thanks for the recipe:) That sounds pretty much what my mother used to
make ... sans carrots, but I use carrot in cakes so they do go well with
sweet things :)

It's much better with fresh pineapple. Canned, to me, gives it a tinny
taste.

Fresh causes the Jell-O not to set up.

He's probably never made it and was told the pineapple was fresh in
the one he ate because they didn't want to listen to his opinionated

Mark, fresh pineapple allegedly has enzymes that keep the gelatin from setting.

The original posted recipe is an oldie but goodie, called "Sunshine Salad" in my BH&G
Cookbook.

I like canned mandarins too, makes a good late night snack. My
favorite canned fruit is purple plums, unfortunately they are very
high in sugar so I don't partake very often. I also like canned
candied kumquats but those are feloneously sweet so I rarely treat
myself,., I love saying kumquats, so sexy how that word rolls off my
tongue... kummm-quats...

I haven't had canned Mandarins but we love fresh. I keep a big bowlful
along with plums and have a couple or three in the evenings:))

Canned are good (I have a dozen cans in my pantry) but fresh Mandarins
are much better, unfortunately they are not available very often. I
buy these at the store, a Great Value at under a buck for 15 ounces:
