Default Zucchini Fritters

Does anyone have a tried and true recipe for zucchini fritters? Yes, I
could Google but that isn't the point.

I think zucchini contain too much moisture to use for decent fritters,
plus all that oil from frying negates the point of zucchini... I'd go
with muffins.

I use the jumbo muffin pans and no paper cups... muffins freeze well.

Zuke cake is good too but more calories than muffins:

Thanks. I don't want to serve muffins or cake with pork tenderloin.

Fritters are too fussy and messy for me, but I have used this method.
http://damndelicious.net/2014/06/21/...esan-zucchini/
I mix in a little panko if I want it crispier and if I want the panko
to brown more, I mix it with a little melted butter before combining
with the herbs and parmesan.

Thanks! I'll be using the oven for the pork tenderloin so this is a
good alternative.

You're very welcome! I'm in the middle of trying to decide if I want
to make roasted butternut squash salad or roasted butternut squash and
apples to serve with pork chops this week.

I do. Served them often as a side at the restaurant and still do at home.
Love them.

Too much oil is 'zactly what I said... of course fritters are
definitely a southern fetish, I've never seen them served in New
England, rarely hush puppys too, although years ago Red Lobster served
those greaseballs as fill-up with smallish portions of seafood. Zuke
sticks are good, most pizzerias here have them as an appetizer
(breaded mozz sticks too), but they are oily, anything fried with
breading sucks up fat. When I have a glut of zukes I grill them,
brush *lightly* with olive oil, dust with seasoning, and grill both
sides. Or I'd prepare ratatouille, an excellent accompaniment to
pork... don't really need a recipe except as a guide, canned tomatoes
work well this time of year:
http://www.epicurious.com/recipes/fo...touille-108350
http://www.foodnetwork.com/recipes/e...e-recipe0.html
I consider fritters absolute garbage food, designed expressly for
those with chronic TIAD, and certainly not for those who claim not to
be big eaters or eater of fattening foods... doesn't get more empty
calorie fattening than fritters... fritters are analogous to carnival
funnel cake.

I wonder if it's too late to try Zicam lozenges. Might help.

Red ones are the best for that. I hope it doesn't turn out to be the flu.
I am going on three weeks and 2 days now and still no appetite. But at
least the pain is gone.

That is how this flu starts. Then the body aches begin. I had stomach
problems and so did some others but not everyone did. I also had severe
body aches and so did my mom and SIL. Zinc based lozenges can cause stomach
upset. Of course they might not but they could. The only thing that helped
me was drinking tons of chicken broth. That made me feel better when
nothing else did. I finally had a little bit of an appetite today. Managed
to eat most of a bowl of chili. Then about 3 hours later had a craving for
raw celery.

Cold-Eeze works when taken at first sign of a cold... I've tried the
cheaper no name zinc losenges but they are not nearly as good.
Cold-Ezze doesn't expire. But from the symptoms you describe I'd say
you have other than a simple cold. Go to your doctor or a local
walk-in clinic, they'll know if a bug is going around... they'll
probably prescribe an antibiotic. All you're doing is treating the
symptoms. You wouldn't have a low grade fevor with a cold.

I've had luck hitting those when I first feel a cold coming on.
I only tried them after seeing a few reports that they actually
work. Who knows, but I do keep some on hand.

That's a long time to be getting worse. I'm sure you don't
need me telling you.

I really wish you'd start feeling better or go to see someone
about it because that sounds bad.

You wouldn't want to eat solids like chicken, that's for sure.
Never mind broccoli.

I vote for the second. Because you want me picking your movies. Heh.
