You could use them in spaghetti sauce, and then freeze or can the sauce. Slice and dry would work. I find that they keep for a couple of weeks if kept in the veggie drawer in the fridge. If you work on using them every day, you could probably use them up before they go bad. Everything tastes better with mushrooms. |

I love this 1 cup corn oil 1 or a couple of cloves garlic, minced (it's up to you how much garlic) 1 pound whole mushrooms, stemmed (if large mushrooms, cut in half or quarters) 1 3/4 cup wine vinegar 1/3 cup sugar 2 tablespoons prepared mustard 2 teaspoons salt 1 teaspoon oregano leaves Saute minced garlic and mushrooms in oil until tender. Add the rest of the ingredients. Cover and chill 12 or more hours. (I really cheat on the amount of mushrooms. I put in as many as the oil will hold.) Darn, I'm going to have to make some soon. Otherwise, why not saute sliced mushrooms in butter until lightly browned. Cool and then freeze in portions. They will thaw nicely and be a good addition to whatever you like. Janet US |

This was nearly 10 years after the divorce, her husband had passed from renal failure. This occured more than 35 years ago, we were both single and best friends. She's gone now. |
