A neighbor overbought and then left town. I have about 3 lb. of the things. any suggestions? (Too bad they don't freeze well....)

They are great grilled on skewers with onion, peppers, zucchini, and
cherry tomatoes.
I like them sauteed in butter or olive oil withe a little salt and
pepper and, at the very end, a couple drops of lemon juice.

But 3lbs. is going to mean a LOT of skewers...

They're good pickled.

You could use them in spaghetti sauce, and then freeze or can the sauce.

Slice and dry would work.

I find that they keep for a couple of weeks if kept in the veggie drawer
in the fridge. If you work on using them every day, you could probably
use them up before they go bad. Everything tastes better with mushrooms.

I love this

1 cup corn oil
1 or a couple of cloves garlic, minced (it's up to you how much
garlic)
1 pound whole mushrooms, stemmed (if large mushrooms, cut in half or
quarters)
1 3/4 cup wine vinegar
1/3 cup sugar
2 tablespoons prepared mustard
2 teaspoons salt
1 teaspoon oregano leaves
Saute minced garlic and mushrooms in oil until tender. Add the rest
of the ingredients. Cover and chill 12 or more hours.

(I really cheat on the amount of mushrooms. I put in as many as the
oil will hold.)

Darn, I'm going to have to make some soon.

Otherwise, why not saute sliced mushrooms in butter until lightly
browned. Cool and then freeze in portions. They will thaw nicely and
be a good addition to whatever you like.

You could dehydrate them if you have a dehydrator. Or you could make them
into a sauce and make tuna casserole or similar.

Part of a veggie tray, for dipping in ranch dressing, for example
Marinated mushrooms in an herby vinaigrette: olive oil and some lighter
acid like lemon juice or champagne vinegar.
Scrambled eggs with mushrooms sauteed in butter.
Stir fries with chicken and mushrooms.
Add to any soup or stew.
Cream of mushroom soup with real ingredients.

I would eat them at every meal, by the way.

Your reading comprehension stinks... where does it say I was still
married to her daughter at the time... I said "ex MIL". This was
nearly 10 years after the divorce, her husband had passed from renal
failure. This occured more than 35 years ago, we were both single and
best friends. She's gone now.

I like to saute a bunch of sliced mushrooms with onions, it
goes great on burgers and steaks, and it keeps in the refrigerator
for a few days.
