And Bryan, we use all REAL chocolate!! Beth tempers it by hand! OMG! I
have to help her figure out our to make her automatic tempering
machine work for her! It will so streamline productoin!!

What kind of machine is it? My wife uses Chocovision machines mostly, though she does have a Savage Bros. for larger batches. I've used both. The big one takes a bit more time to figure out, but the Chocovisions are a piece of cake.

the shop.

This is gonna be SO COOL! (Has to be, Summer's coming, and a good

Willl do Ed! Thanks man! Yeah, keeping the Chocolate Covered Cherries
*covered* and leak free is the grteatest challenge I have with them.
I've discovwered ONE good way to insure it, but it redultds in too
much chocolate per cherry (if there can be such a thing!) And that is
to double dip them! THAT insures an impervious chocoatew shell, but
it's too thick! I double dipped one one time, even took a pic of it
for future reference too!

I don't think double dipping would be a problem. Just charge extra for the double dip. I'd pay it.

I guess I could offer them as an option. They certainly are leak-proof
that way!!

Like I said, I made one as a test, and to me, there's just too much
chocolate per cherry. This is the opinion of someone who made them for
20 years for Christmas Candy, and I grew to have a certain expectation
of them.

I sell them basically by weight, so for double dipped, you'd get fewer
cherries per lb. I'd stick with the same per lb price.

I typed the above about an hour ago, before the kitchen plumping clog.
Folks, don't put food down the disposal that you can put in the garbage.
I've told my dear wife this before, but she forgot. As disgusting as the
cleanup was, I love her far more than I hate doing disgusting plumbing
cleanups, and now that it is over, and I hit send, I'm going to tell her
exactly that.

All the replies about sock puppets, and none about this comment related to
cooking.

I forget your thread from before, but exactly how and where are your
cherries leaking? If from the bottom, you can do a first bottom dip, and
then a second whole dip so only the bottom portion is double dipped, solving
the leak problem and keeping the cherry:chocolate ratio from getting out of
hand (as if that is even possible!).
