Of course, there are grey areas in terms of some fish and waterways being both or partial fresh AND salt water... |

I consider edible freshwater life to be freshwater fish whether fin or shell... to discriminate simply name the critter; brook trout, freshwater clam, crawfish, pickerel, etc. |

Hmm. Well, if it's out salt water then I just refer to it as seafood. Freshwater here would invariably refer to brook, brown and rainbow trout - there are other freshwater species, but rare by comparison and few bother with them. Oh, there are also salmon in some of the rivers here... no freshwater shellfish to speak of. |

I find it's best to cook smaller trout (say, under 2lb) whole, then pick off the flesh from one side of the fish with a fork, then peel the skeleton away (hopefully intact)... Bigger trout can be filleted easier and with few (if any) remaining bones if done right. |

Started eating their product decades ago and have never been disappointed. We too prefer fresh brookies or rainbows, but that's mainly a vacation treat. The one thing that they really have knocked is the process, you would be hard-pressed to tell this from wild caught. |
