My favorite way to eat cauliflower is to marinate the blanched
flowerettes and sliced stems, good substitue for marinated
artichoke... the leaves are very good julienned in soups, even in
ramen... cooking cauliflower to mush is sinful. I think ricing
cauliflower is a great way to *waste* a perfectly good special
veggie... makes more sense to rice/grate a lowly inexpensive
ruttabaga.
