Our guess is that cedar planks - we bought, soaked, and use on the grill
with salmon, which came out _great_ - are one use only because they get kind of charred on the bottom. True? -S- |

When we used to plank fish on canoe trips we nailed the fish to a split cedar log and set them upright next to the fire. |

Resoak, reuse, keep a squirt bottle handy in case they flare. The key is getting them off the grill on that first cook and right into a bucket of water. |

I tend to go for about 45-50 minutes, but our clime here is so dry it's needed. I think 30 minutes would be fine in most cases. Just be sure to get the fish or meat off and get that underside extinguished where it's charring. I enjoy planking, for a steak I'll sear off both sides first on high, then plank for 15 or so minutes on medium low. Works every time. |
