Default Dinner 7/28/2015

A few months ago I cooked a 4 lb. chuck roast in the crock pot. I froze
the leftovers in individual portions.

For dinner tonight, I had a portion of chuck roast, mashed russet
potatoes and Fordhook lima beans. Yep, I love lima beans.

If you looked at the picture you may have noticed I didn't put gravy on
the mashed potatoes. When it comes to mashed potatoes I really prefer
only butter, S&P.

I bought Fordhook once because it seems like that's all you eat, so I
thought they must be different. It turned out that they're just like
any other frozen lima bean and I just don't like limas (unless they
are baby limas).

Fortunately, what they're doing out here in the West is substituting
edamame beans for lima beans in dishes like a mixed bean salad and I
like them.

Absolutely not. I eat all sorts of lima beans. I just prefer the
Fordhooks.

Pulled pork. I really do not care for pulled pork but my husband
loves it so I make it 3,4 times a year. I have finally settled on a
happy compromise. I pull half the roast and leave half in one piece.
Husband can have his pulled pork with sauce and I can have cold sliced
pork sandwiches.

Leftovers.

I pulled a small meatloaf out of the freezer and made some onion &
mushroom gravy to go over it. I also heated up some baked beans and a
bit of scalloped potatoes from a couple of nights ago. The greenery
was supplied by a cucumber out of our garden.

It was really good.

I had a package of Land-O-Frost thin chicken slices, that's it. I wasn't
very hungry and it was handy. I usually parcel it out to my dog, but I ate
it instead. A whole .59 worth. :-)

Sorry, I can't find edamame at the local farm stand. I used to live in
soybean country but calling it edamame is really too left coast.

Lentils are legumes, not beans. And I sure as hell wouldn't serve
lentils and beans over rice. Talk about overkill.

You might consider a larger pork loin roast.

You can still do pulled, the sliced is even better, and the fat content
for either is lower.

It was tasty! I love chuck roast cooked in the crock pot. Easy to
portion out for an easy meal from the freezer later. I had to decide
between brussels sprouts, turnip greens or lima beans... or butter
beans. The big fat Fordhooks won.

Butter beans seem to go better with pork chops than with chuck roast.

I made a rissotto with prawns, peas and parmesan and today will be salmon
with new potatoes and peas.

Sounds like a good compromise I've never had pulled pork but I have
looked at recipes et al but I still can't get myself to fancy it

Nothing wrong with that, I often have breakfast for dinner;
cereal/omelets are easy and quick... I like dried cereal with fresh
berries, I like evap instead of half n' half. Last night I was
running late as I mowed all day but still there was enough time to pop
a roast beef and a half dozen giant potatoes in the oven, just had
dinner a bit later, at 7:30. This morning the outside cats enjoyed
the drippings mixed in their food. Tonight will be cold roast beef
sandwiches and I may make some potato salad from the left over baked
potatoes. I'll be mowing again today, I'm behind due to all the
recent rain. Picked about 20 kirbys yesterday, will make a cuke salad
too.

I rarely buy deli salads, but the last multi-bean salad I bought had
edamame instead of limas. If Safeway is doing that, then it's more
common than you think.

Quesadilla:

Flour tortilla with Kraft pepper jack cheese melted onto it,
some of my husband's homemade salsa, a little Greek yogurt,
and shredded iceberg lettuce.

After he came home, I grilled some asparagus for him, and
ate a little of that.

Tonight: grilled chicken breast served in some simple way.

Dinner last night here was 2 tomato sandwiches with swiss cheese and
Lay's Classic potato chips. Dessert was 2 Hostess Twinkies later on in
the evening.

Tonight's early dinner (since I'm not working today) will be 3 fried
eggs over easy, buttered toast and a side of cottage pie. yum.
Probably another twinkie later on at night.

I love the canned butter beans. I simmer them with butter, s&P,
