Default Simple high-fiber meals?

I'm getting tired of my current high-fiber meals. I seem to feel better
when eating high fiber. Any suggestions for simple such recipies?

Currently I make such stuff as bean burritos, northern beans & smoked meat
- pork shanks or turkey, lentils & sausage, 15-bean soup, chicken pot pie
with peas & carrots, etc.

You have any favorites?

You're looking for an all in one dish instead of three items on the
plate?

I don't plan meals in terms of fiber, but I do make a habit of serving
a vegetable or at least a tossed green salad. Nothing complicated -
fancy lettuce leaves from a bag and homemade lemon vinaigrette.

Like I implied, I'm not big on all in one meals - but here are some
ideas I've tried and liked

Chicken Chili with Black Beans and Corn
Chicken Piccata with Artichokes, Mushrooms and Heavy Cream
Roasted Corn Chowder with Chicken, Lime and Cilantro
Rosemary Lemon Spaghetti Squash (with chicken)
Vegetarian Japchae (Stir Fried Glass Noodles with Vegetables)

Once you master a piccata sauce, you can use it for more than chicken.
My current favorite way to use it is with fish and I just saw pork
piccata yesterday. Of course, you need to think about what else to
put on the plate. I like to serve plain couscous (it's brain dead
easy to make) and a green vegetable with it.

Popcorn!

Having a naturally slow metabolism, I eat a lotta popcorn. Keeps me
regular.

If you don't like plain popcorn, try flavored. I occasionally eat
popcorn w/ cheddar or even Munch n' Crunch.

The easier the better. I'm not fond of cooking. So, yes, one dish meals
are prefered. In fact, I like to use the crockpot.

Thank you. I've found that just green vegetables don't always do it. Some
really don't have as much fiber as we think.

I jes made up another pot of red beans. I overextended my budget, so
I may jes hafta make some rice. Fortunately, I already bought some
wht basmati rice to make a tahdig. If it doesn't get too hot,

If you find cookies too sweet try oatcakes. You can put some jam on them
if you want them sweet or you can have them with cheese.

Are you looking for fiber because of regularity issues? Try eating
yogurt with active cultures. Even flavored yogurt has them now. I
like yogurt instead of milk with fruit and cold cereal for breakfast.
Oatmeal is high fiber. My favorite type is steel cut. Sprinkle wheat
germ over it for even more fiber. You can cook it overnight in your
crockpot, but I prefer the "no cook" method.

Agree! Oh how I miss that. I can eat popping sorghum and it tastes just
the same. It's just more time consuming to pop and so tiny that I eat it
with a spoon.

I have an easy recipe. Okay, I don't but Allrecipes does.

To make things really easy and no mess, put all the stuff for the crumb
topping in a zip top plastic bag, squeeze the air out and just mush it all
around with your hands. I have used strawberry fruit spread for these and
also cut back on the sugar. I have actually used a variety of fruit
toppings, including fresh berries. Only thing I didn't like was orange
marmalade. Just too sweet for me.
