Seems to be a trend, probably started by a TV chef so now everyone has
to do it. Some thing not so bad, but I too prefer the side by side
method we've used for decades.

Some people seem to like it. I had a cousin who was in the restaurant
business for years and he like it. I never did. As much as I like fish
I never liked to to be mounted on top of a stack of rice or potatoes
and the vegetables and dripping fish juices into them.

What's so hard about moving it off the rice if you want it
side-by-side? I like the presentation... and then I deconstruct it to
eat. You don't even need Cordon Bleu certification to do it.

Depends on the dish; not everything should be like lasagna.
Presentation may be nice when served but after you move things around it
may look terrible. If I want to mix foods on my fork I prefer it to be
my choice.

We had something with tomatoes for dinner last night.

We tomatoes with something for breakfast this morning and something
with tomatoes for lunch.

We changed it up for dinner tonight.....tomatoes with something AND
something with tomatoes.

Actually, we are gorging on sweet corn, too. And I am not complaining
one bit. This season is all too brief.

You have choices. You can choose where to eat or you could choose to
tell them you want horizontal food. I have horizontal food whenever I
want, it's called home cooking. When I eat out, I want some pizzazz
for my money. I don't want architectural towers, but I'm not opposed
to a simple plated arrangement that consists of leaning a piece of
protein against the starch.

By then the juices have already dripped down into the other things on
the plate. Not stacking food in a pile does not mean there can be no

There are lots of ways to present food nicely without piling it up.
From my experience, it seems to be a labour intensive way of serving
you smaller portions. I don't know why some people think that
presentation must involve stacking.

understand your problem is with it. I have no problem with food

coming at once. I give away so much but I won't give away my sweet
corn. There are heathens out there that think corn should be tossed
in the fridge for a couple of days or a week and then they think it
should be boiled for 15 minutes or so. Heathens they are I say! I

I had heard somewhere that it was an application of a flower arranging
course some chef took in an effort to gain recognition. You know, a
vertical space, a mid-level space and a foundation. I don't want my

WTF? Those aren't stacked. There are chops leaning against the potatoes,
peas beside the potatoes and and a couple grilled tomatoes on the other
side. All are touching the plate.

Picture a base of rice, fish fillet sitting on top of the rice, a
couple spears of asparagus on top of the fish.

I go to a local produce market and buy a single cob of corn, chosen
without peeling back the husk. I soak it in water while doing other
dinner prep work, then put in on the grill. Thanks to a suggestion here
last year, I sprinkle some lime juice and Mexican chili powder on it.

Agree, it's ridiculous. Have you ever been presented with something
like that? I haven't. Any chef who serves it would have to be
completely out of touch with reality. I can visualize attacking a
tower of soft or finely chopped items with a fork and working my way
down (like the mound of Cobb Salad presentations we got in the olden
days), but dealing with a tower that high is silly and one with items
that need a knife to cut through them is out of the question.
