Default Stuffed Zucchini

Our church garden is generously providing us with zucchini again this
year. Last night I stuffed one with a hot Italian sausage, rice mix.
It was deeeelicious and Yippie I have leftovers.

Here's how I made it.

Looks really good. It can also be done with fresh tomatoes and
peppers from the garden. I also like to put a bit of marina on top
before putting into the oven..

Looks fantastic, koko. I'm thinking of doing something similar with the
2nd eggplant I picked up the other day.
