Chinese Wife Cake (Lo Paw Bang)


INGREDIENTS Nutrition

SERVINGS 12 UNITS US
Filling

250 g winter melon, strips, candied, chopped
60 g sesame seeds, toasted
65 g caster sugar
80 g glutinous-rice flour, cooked (koh fun)
120 ml water
2 tablespoons oil
Water dough

150 g high-protein flour, sifted
150 g plain flour
2 tablespoons caster sugar
1 tablespoon golden syrup
100 g shortening
14 teaspoon vanilla essence
150 ml water
Oil dough

120 g plain flour, sifted
100 g shortening
Glaze

1 egg, beaten with 1/8 tsp salt

I know these cakes as Chinese wedding cakes. I don't get to eat them too
often because I don't get invited to too many Chinese weddings. Chinese
weddings are better than all other weddings.

The interesting thing about the recipe is that it uses a two part dough.
Water dough and oil dough to create a flaky pastry. I've never made the
stuff but I've eaten enough of it. Things work out better that way.

I liked that 2 part deal as well. I wonder if the pictured one in a
cellophane wrapper was any good?

Cakes in wrappers are fine with me! You might like the look of moon cakes. You certainly could call them festive. I try to stay away from the ones that have the salt yolks in them - even though that symbolizes the moon which would be the whole point of moon cake!

I've never had one of these new-fangled moon cakes - just the boring old
traditional ones. I'm fairly sure that I'd like a cheesecake moon cake.
Hell, I'd probably like cheesecake green bean casserole.
