Default White Peaches

The other day we stopped by at an honour system fruit stand to get some
freshly picked peaches. The regular peaches were $6 and there were
baskets of white peaches for $5. We had a $5 and no change so we got
the white ones. They are actually dark skinned, but the flesh is very
pale.

Not impressed. I love peaches but I don't often them because they are
rough on my system. I tried a couple slices of these things and I was
not impressed. They were not as juicy as regular peaches and they were
very bland. I was telling a friend about my experience and he liked
them. He likes peaches but finds them too tangy, and these were easier
for him to take. My wife made a coffee cake with some of them yesterday
and the texture of them in the cake was nice, but there just wasn't that
great peach flavour.

White peaches are like white corn: bland, too sweet and no real
flavor.

white corn. It's not too sweet or bland and the best. Maybe they don't
sell the good stuff "in your area." (and Julie's area). It must be a

Could be. It's that way with artichokes. IMO white corn is too sweet
and doesn't have much corn flavor if there is any to be found. I love
the two color corn, but it's expensive.

Most wht corn is a strain of sweet corn picked in the "milk" stage.
Most of 'em are hybrids created to extend the growing season. Silver
Queen was very popular in NorCal. It should never be overcooked.

I recall the first time I ate wht sweet corn. It was at a bluegrass
festival and it looked like a nice change from the usual kettle korn
and burrito stands. I watched the guy shuck an fresh ear of wht sweet
corn, jam a stick in one end, and dip it in boiling water for exactly
one minute. I pulled it out, butter n' salted it, and handed it to
me. Sublime!

Turns out, cooking it longer only makes the kernal skin tougher. I suspect
the 1 min boil was merely to warm the corn. I prolly could've eaten
it raw.

I like white corn. It is sweet and tender. I am pretty much out of corn
eating season here. There is lots around, but it is way too yellow for
my taste.

White peaches lack acidity. Some people prefer this, but this explains
why you found them bland, and why they seemed to lack flavor in
the coffee cake. Adding lemon juice might have helped.

They should not have been less juicy, however.

They usually are less juicy and less sweet, as well as less intensely
flavored and lower in acid.

Dry pithy peaches are typically underwatered. In these tight H2O
times, I suspect farmers are using as little water as possible to grow
their crops. I jes bought some organic yel peaches and they are
borderline dry. Some juice, but not as much as I remember as a kid,
when farmers had enough water to flood orchards to 4-5 inches deep.
