Yep, and I know exactly why they flood red meat with CO (Carbon
Monoxide) too. The same reason it can kill you. CO has about 100 times
the affinity for a hemoglobin molecule than oxygen (O2) does. I
imagine that higher affinity applies to a myoglobin molecule too, the
compound in red meat myscle tissue too which temporarily stores O2 for
times the blood supply is interrupted.
