Default Veggie tart

I had friends visit yesterday and needed to make a couple of veggie dishes.
I made a tart which turned out rather well and I was pleased <g>

I roasted a load of veg - red onion, zucchini, red peppers, mushrooms, sweet
potato and garlic with olive oil. Oh and a tin of drained chopped tomatoes.

I then mixed up grated cheeses (I used goats, feta and mozzarella) with a
beaten egg. Spread over the veg when it had cooled and topped with a sheet
of puff pastry, the underside of which I had covered in tomato paste.

When it came out of the oven, I turned it over and it looked great

First attempt but was very pleased.

I cooked it upside down because so often a tart with that kind of filling
can be soggy.

Oh and the other 'veggie' thing I made was my 'swirlies' but I have
described them before

So, what did you cook yesterday??

Shrimp marinated in garlic, lime, and a few flakes of chilli, then grilled
Grilled sweet corn

My husband actually devised the marinade; it was quite good.

Oh, and vegetable soup for lunches for the week.

Yesterday I made grilled pork patties and pork belly with noodles and
fresh herbs.

Oh, they are the simplest things, but are a favourite with D and family. I
am always asked to make them. He calls them 'swirlies' but I suppose they
should be called 'pinwheels',

A sheet of puff pastry, spread with tomato paste and covered thickly with
grated cheddar cheese. I roll it up from the long end and cut it into
slices (1 1/2 inches approx) lay them flat, brush with egg and bake. Hard
to believe the popularity given they are so simple and easy

I have to go to a specialty butcher here to get pork belly with the
crackling still on. I leave it uncovered in the fridge overnight,
score well (I use a craft knife) salt well then place on rack in
roasting tray and roast very slowly, maybe 325°, for 2-3 hours.

I also have another method from a Chinese fried, it's delicious.

Goodly amount of frying oil in the wok

Cornflour
Egg
Thai Sauce
Ketchup
Salt

Cut the porkbelly into small pieces. Heat the oil in the wok until
quite hot. Quickly brown the pieces in the oil in small proportions.

Drain and cool.

Mix the sauce ingredients together and dip the pork pieces in it.

Refry and then put to drain on wax paper.

When ready to serve, quickly refry yet again.

I grilled them. I used a grill pan with holes in it on one side and
solid on the other on the outdoor grill.

The pork belly is thinly sliced, marinated then grilled. I think this
is my favorite way, so far, to cook pork belly.
