Default Boneless Skinless Chicken Breast

It seems like the grocers are selling lots of boneless skinless
chicken breasts. What's the most preferred method of cooking this
piece of chicken?

Some large chicken growing meat farm must've just harvested the dead
chicken bodies!!

Good thing about skinless bnoneless chicken breasts, they hardely have
any flavor of their own, but are a good souce of relatively low fat
protein, so you can do just about anything with them. I've used them
for curried chicken and BBQ chicken.

It depends on how big they are. I try to get the small ones and use them
for grilling, either in a pan or on the gas grill. They can cook
through without the outer portion getting overcooked.

I used to buy a lot of boneless skinless chicken breasts but lately I
have been buying them with skin and bones because of the tremendous
difference in costs. It takes less than a minute to rip off the skin and
separate the meat from the bone and it the discarded material is minimal
so you don't lose that much of what you paid for by the pound and you
aren't paying the huge markup for the little bit of labour involved.
Besides, the discards can be used for soup.

Not being into sous vide, yet, I do a pretty simple cook.

I pan-fry the breasts for jes long enough to put a brown on both
sides, then I put the oven-proof pan w/ breasts (no lid) ina 325 deg F
oven for about 10-20 mins (depending on size).

I primarily use them for 2 dishes. One to create a shredded chicken
filling for burritos. Second is to marinate in teriyaki sauce to add
to sriracha udon noodles

Sliced, tossed in seasoned flour, and quickly sauteed in a mix of
olive oil and butter.

I prefer them grilled. (I prefer almost every meat grilled.)

Generally, I butterfly them so they're pretty uniform thickness,
which helps me to not overcook the thin areas while waiting for the
thick parts to get done.

I just made some into pot pie filling but I usually do one of two ways.
Either seasoned with Montreal chicken seasoning, then cooked in a skillet or
grill pan for about 20 minutes or... Cheezeit chicken. Coat each piece
with sour cream then dip in crushed crackers. Put in buttered baking dish
and drizzle with more melted butter. I can't remember the bake time and
temp. but there are plenty of recipes on the Internet.

The best recipe I know for skinless chicken breast is:
take it out of the fridge and bin it.

Oh Pshaw. I love chicken and have chicken breast meat 3-4 times a week.
Most often it is deboned and skin removed. Maybe you guys just don't
know how to cook it but it works for me. In days gone by I found it
tough and flavourless, but then I learned not to cook it as much.

I'll concede I haven't spent too much time trying to get the most out
of chicken breast and I have had very nice meals with it. But the same
meals would be even nicer with thigh fillet, IMO. My comment was 90%
tongue in cheek and 10% opinion.

I agree Dave! I wonder if anybody goes to the trouble of using a
thermostat before placing the breast in the pan and then timing the
actual cooking or taking the temperature of the meat before removing
from pan?

I just do them in the microwave about 44 seconds at a time (starting
from frozen). This way, I catch them JUST as they are fully cooked but
not over cooked. Mild taste, but very flavorful.

That said, just a few inches away on a full chicken, the thighs have
TONS of good flavor and the timing doesn't have to be so exact.
Probably the extra fat in them.

I prefer the breast meat for chinese food...stir fry and chicken
sandwiches. For just eating chicken on it's own, the dark meat is the
best!

Well, that's what I've always argued too. Someone once said "it takes

Chicken breasts will mainly taste like whatever you season them with.
I like to marinate them in a combination of lemon, lime, and orange
juice with lots of crushed garlic, some black pepper, and some honey,
which helps them brown nicely. Grill them fast, serve over rice
w/vegetables with citrus sauce on the side (more of the marinade, with
additional honey to taste and cornstarch to thicken, cooked till it
thickens).

Another quick and simple grilled approached is Greek style - season
breasts with salt, pepper, garlic and oregano. Grill quickly over high
heat, plate them then squeeze some fresh lemon juice over them. Or
just salt and pepper, then grill pineapple slices along with the
chicken, serve the meat on a bed of rice with the grilled pineapple
slices atop the chicken breast.

And of course they can be grilled and glazed with just about anything
you can imagine. I like a combination of minced onion and tart
cranberry sauce, or apricot jam with a bit of crushed garlic and a
dash of soy sauce.
