All this talk about sous vide cooking has got me to thinking. For all of
you who have machines, what's your favorite thing to make in one? For me, it was the very first thing I tried, a couple of loin lamb chops. Absolutely fantastic. On the other end, I did some spare ribs once and left them in way too long and got some vaguely porklike mush. |

No more rubbery shrimp. |

For me my very favourite is a taking a very tough piece of meat and several hours later finding a wonderfully tender and delicious joint ![]() I like to make thick chops which when browned up are heavenly ![]() Yes, for some things one must be very careful! I mentioned a piece of salmon that ended up like mush ![]() (which fortunately is something I love to do, to find out what works best for each person ![]() As always, I expect we all differ, so personal experimentation is ALL ![]() -- http://www.helpforheroes.org.uk/shop/ |
