I have never used it. Now, with all this sous vide stuff, looks like it
might be handy. What is the best brand? Which wood? All folks with any liquid smoke experience, I'd like to hear about it. nb |

I have used both, The Colgin mesquite is rather nice in small doses, but their apple liquid smoke is my all time favorite. http://www.colgin.com/ Now I see they have pecan too, YES!!!! |

This was yrs ago, back when I foolishly trusted everything on the grocer's shelf. I've never heard of sous vide kalua pig but who has? I have made shoyu pork in a rice cooker on the warm setting. I left it in the water bath for a couple of days but that hardly seemed worth the effort. I add a few drops to tuna salad to make smoked ahi spread. It's great stuff - just don't tell anybody how you made it. I saw smoked ahi spread in the market recently - you can bet they ain't telling anybody how they make it either. I used to buy real smoked ahi spread and it's awful good but the guy stopped making it so that's how that goes. My idea is that you could use liquid smoke to make tea smoked chicken using a mix of rice, brown sugar, and liquid smoke.
