The recipe is from Cook's Country TV Show Cookbook. The chicken is
currently soaking in the brine. Once out of the brine it goes to the grill with wood chips for smoking. When done it gets brushed with the glaze. How can garlic, ginger, soy sauce, pineapple juice, chili garlic sauce and brown sugar be bad? I know I'm mixing cultures, but I though I would serve a Greek salad with it. In my mind the flavors are going to be good together. Janet US |

I don't really know. The chicken is a big boy, almost 7 pounds (I go with what is in my freezer). It's cool outside today and a big chicken could take a while. I'm shooting for 5:30 - 6:00. What people make at home is barbecue chicken, not huli-huli chicken. I think this sauce is kind of a sham/red herring because you don't really need it nor does the chicken need a teriyaki sauce baste. The stuff they use a mop on real huli-huli chicken is watery and thin - actually, it's pretty lame. |
