I made meatloaf the other day and wished I could buy a tiny packet of
flaxseed to put in it as an egg substitute. But all of the flaxseed I have seen comes in a far larger quantity before it goes bad. So imagine my surprise when I found tiny packets at the Walmart food store! They also had hemp and chia seeds and some other things. On the baking aisle. Brand is Badia. The one packet was still twice as much as I needed for the meatloaves that I made but I can just add it to some bread or something. And then I won't have to store it. |

Going through my pantry this morning, I found a sample packet of "organic raw white buckwheat." Ingredient list just says "buckwheat groats." I don't remember where I got it (it was a free sample). It almost seems like it came in the mail about a year ago. It's from Nuts.com Anyway, the sample pack would fill a 1/2 measuring cup...or maybe a 2/3 measuring cup. What would you use that for? I have no clue. I did look up uses but saw nothing that I would bother with. Like making crackers, etc. Not me. Evidently, it's a nutrition suppliment and not a taste thing. |

Does it look like flour (milled) or oatmeal? -- |

No Carol. It's a packet of seeds. Looks like this: http://www.foodsubs.com/Photos/rawun...heatgroats.jpg |

I had one of those too for some reason. Not sure where they came from or why I had them. I wound up tossing them out when I realized they were very old. |

Kasha... kasha varnishkas is what I cook for Thanksgiving in lieu of stuffing. http://wolffskasha.com/ http://i64.tinypic.com/20af6ew.jpg http://i64.tinypic.com/snnvgw.jpg |

The flavor is very different from regular pancakes, and I really liked them. MaryL |

I posted a message a few minute ago suggesting that you try buckwheat pancakes, but that would require buckwheat flour (not groats). MaryL |

I could see that as a side dish but I would still make real stuffing (and cooked inside the bird). |

I ended up trying them yesterday after looking at several recipes. I found one that I had all the ingredients for. Here's the basic recipe but I changed it a bit. Result was very tasty. http://www.drweil.com/drw/u/RCP00218...egetables.html First I toasted the buckwheat "seeds" in a dry frying pan. This supposedly turns them from bitter to a nice nutty flavor. Doing this turns them into Kasha. I put them in a small saucepan for later. I had fresh white mushrooms, not dried others. In a frying pan, I sauteed the carrot, onion, and mushrooms in a little butter, then I added in some beef broth. Once all this was cooked, I put all into the saucepan with the buckwheat, added more water, brought to a simmer then covered. That 1/2 cup of dried buckwheat made about 2.5 cups of finished and was very tasty. Buckwheat definitely has a very distinct taste. http://i63.tinypic.com/2w6wak4.jpg Sorry about the blurry pic. It's an old camera. |
